For Greater Sustainability: Special Chicken Dishes

A unique feature of the menu at Zoo Caffè & Ristorante is two special chicken dishes. The meat for these dishes comes from retired laying hens from organic egg production. In Switzerland, such laying hens have an average life expectancy of 18 months, as their productivity declines after that time. The culled birds are typically used to generate energy in a biogas plant.

Laying hens are not suitable for traditional meat production because they put on very little meat, and what they do produce does not meet standard specifications. Zoo Zurich, in collaboration with a specialized producer, has now developed two chicken dishes that make use of the hens’ meat. This ensures that this valuable, high-quality protein resource is not wasted and that the retired laying hens are put to good use in a second career.

All other meat served at Zoo Caffè & Ristorante also comes from animals raised under humane conditions, exclusively in Switzerland.
